À travers l’analyse du discours sur l’alimentation contenu dans le magazine Ling Long (玲珑杂志1931-1937), ce mémoire se penche sur les transformations qu’ont subies les habitudes alimentaires des Chinois à Shanghai dans les années 1930 au contact de nouvelles connaissances dans le domaine de la nutrition et sous l’impulsion des élites chinoises en quête de solutions pour renforcer la nation. Nous y montrons comment le magazine Ling Long révèle ces transformations mais aussi comment il a participé à ce phénomène, non seulement en introduisant son lectorat aux principes et concepts à la base de la nutrition scientifique, mais surtout en proposant d’adapter ces nouvelles normes et pratiques alimentaires à la fois au contexte local chinois et aux préoccupations de ses lectrices. Based on an analysis of the discourse about food contained in the Ling Long magazine (玲珑杂志 1931-1937), this dissertation focuses specifically on the transformations of the Chinese food habits that occurred in Shanghai in the 1930s by contact with nutritional knowledge from the West and under the impetus of Chinese elites who were looking for solutions to strengthen the nation. We show how Ling Long magazine participated in this phenomenon, not only by introducing its readership to the principles and concepts underlying scientific nutrition, but especially by adapting these new food standards and practices to both the local Chinese context and the concerns of its female readers.
